Biltong, a beloved South African delicacy, is a dried meat snack that’s perfect for satisfying cravings anytime, anywhere. While traditionally made by curing meat in the South African sun and wind, you can now enjoy this tasty treat in any climate with your very own DIY Biltong Box. Here’s how to make your own biltong using simple ingredients and a bit of patience.

Ingredients:

  • Silverside Beef or Venison
  • Red Wine Vinegar
  • Salt
  • Black Peppercorns
  • Chilli Flakes
  • Coriander Seeds

Step 1:

Make the Cut Start with approximately 1.5kg of silverside beef. Using a sharp knife, cut the beef along the grain into slices about 1cm thick. Unlike typical steak cuts, cutting along the grain helps achieve the desired chewy texture for biltong.

Step 2:

Vinegar Bath Transfer the beef slices into a plastic container and pour red wine vinegar over them, ensuring all pieces are coated. Let the beef marinate in the vinegar for about 30 minutes to aid in preservation.

Step 3:

Spice it Up In a bowl, mix together sea salt flakes, crushed black peppercorns, chilli flakes, and crushed coriander seeds. Adjust the spice levels to your preference. The salt is essential for preservation and drying.

Step 4:

Rub & Hang Rub the salt and spice mixture onto each piece of beef, ensuring they are fully coated. Hang the seasoned beef slices in your Biltong Box using small metal hooks or improvised paper clip hooks. Let the beef dry in the box for 4-5 days, adjusting the drying time according to your desired moisture level.

Step 5:

Enjoy! Once dried to your liking, take down the biltong and slice it thinly or thickly, depending on your preference. Store the biltong in a sealed bag or container to maintain freshness, and enjoy this delicious homemade snack for weeks to come!

With this simple DIY guide, you can indulge in authentic South African biltong anytime, anywhere. Get ready to savor the flavors of Africa in the comfort of your own home!
